  • 1 pound chicken breast, diced Can substitute with turkey or tofu.

For the Sauce

  • 3 tablespoons olive oil
  • 1 clove garlic, minced Increase garlic to taste if desired.
  • 1 cup Boursin cheese Substitute with cream cheese if unavailable.
  • 1 cup chicken broth Use vegetable broth for vegetarian option.
  • Salt and pepper to taste

To Serve

  • Fresh parsley for garnish

Cooking the Pasta

  • Cook the pasta according to package instructions. Drain and set aside.

Preparing the Sauce

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté until fragrant, about 30 seconds; do not let it brown.
  • Add the diced chicken and cook, stirring frequently, until no longer pink, about 5-7 minutes.
  • Stir in the Boursin cheese and chicken broth, mixing until smooth and creamy.

Combining

  • Add the cooked pasta to the skillet and toss to coat well. Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh parsley.

Notes

For more depth, consider adding lemon juice or zest before serving. Make ahead by cooking the chicken and sauce, then adding pasta when ready to serve. Not recommended for freezing.
