Main Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1/2 cup soy sauce Use low-sodium for less salt.
  • 1/4 cup brown sugar
  • 1/4 cup bourbon Can be omitted or replaced with chicken broth.
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • to taste cooked rice, for serving

Preparation

  • In a large bowl, combine the soy sauce, brown sugar, bourbon, apple cider vinegar, garlic, and ginger.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.

Cooking

  • Pour the sauce over the chicken and simmer for about 2-3 minutes.
  • In a small bowl, mix the cornstarch and water together, then add to the skillet to thicken the sauce.
  • Stir well to coat the chicken in the sauce.
  • Serve over cooked rice.

Notes

Cut chicken into even pieces for even cooking. Taste the sauce before adding cornstarch and adjust sugar or vinegar if needed. Do not boil after adding cornstarch; simmer until sauce thickens. For optional garnishing, add chopped green onion or sesame seeds.
