Instructions
Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture, mixing well.
- Gradually add in the dry ingredients, stirring until just combined.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes or until golden brown. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Assembly
- Once cooled, take a cookie and place a dollop of vanilla custard on top, then place another cookie on top of the custard to create a sandwich.
- In a microwave-safe bowl, melt the chocolate chips with vegetable oil. Drizzle the melted chocolate over each cookie bite.
