Ingredients
  

For the Biscuits

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, cold and cubed Make sure to use cold butter to create flaky biscuits.
  • 3/4 cup milk

For the Gravy

  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour For thickening the gravy.
  • 2 cups milk For the gravy.
  • Salt and pepper to taste

Instructions
 

Preparation of Biscuits

  • Preheat the oven to 450°F (230°C).
  • In a mixing bowl, combine 2 cups of flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the milk just until the dough comes together.
  • Turn the dough out onto a floured surface and gently knead a few times. Roll out to about 1 inch thick and cut with a biscuit cutter.
  • Place on a baking sheet and bake for 12-15 minutes until golden brown.

Preparation of Gravy

  • Cook the sausage in a skillet over medium heat until browned.
  • Sprinkle with 1/4 cup of flour and cook for another minute.
  • Slowly whisk in 2 cups of milk, and bring to a simmer.
  • Cook until the gravy thickens, stirring constantly. Season with salt and pepper.

Serving

  • Serve the biscuits warm topped with the sausage gravy.

Notes

Make sure to use cold butter to create flaky biscuits. Don’t overwork the dough when kneading; it should be gentle and quick to keep the biscuits tender. For a richer flavor, you can use a combination of different breakfast sausages.
