Ingredients
  

For the Base

  • 1 package Gluten-free sponge cake or ladyfingers Any store-bought or homemade gluten-free cake works well.
  • 2 cups Mixed berries (strawberries, blueberries, raspberries) Use seasonal, ripe berries for the best flavor.

For the Coconut Cream Mixture

  • 1 can Coconut cream or dairy-free whipped topping Store-bought dairy-free whipped topping can be used.
  • 2 tablespoons Honey or maple syrup Optional for sweetness.
  • 1 teaspoon Vanilla extract

To Serve

  • 1 bunch Mint leaves For garnish.

Preparation

  • In a large bowl, whisk together the coconut cream, optional sweetener, and vanilla extract until smooth.
  • In a trifle dish or a large glass bowl, layer the gluten-free sponge cake or ladyfingers at the bottom.
  • Add a layer of mixed berries on top of the cake, mixing and matching for color and flavor.
  • Spread a layer of the coconut cream mixture over the berries, making sure to fully cover them.
  • Continue to repeat the layers of cake, berries, and coconut cream until all ingredients are used, finishing with a layer of coconut cream on top.
  • Garnish with fresh mint leaves and any remaining berries.
  • Chill in the refrigerator for at least an hour before serving.

Notes

This dessert can be made a day in advance and stored in the refrigerator for up to 3 days. For the best flavor, use fresh, organic berries.
