  • 1 1/2 cups all-purpose flour Can substitute with whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil Can substitute with melted coconut oil or applesauce
  • 1/2 cup sugar May reduce or use a sugar substitute
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk Can use almond milk or any non-dairy milk
  • 1 cup fresh blueberries

Preparation

  • Preheat the Oven: Set your oven to 350°F (175°C) and grease a loaf pan.
  • Mix Dry Ingredients: In a bowl, combine flour, baking powder, baking soda, and salt. Whisk until well mixed.
  • Prepare Wet Ingredients: In another bowl, whisk together vegetable oil, sugar, egg, and vanilla extract until smooth.
  • Combine Ingredients: Gradually add dry ingredients to wet ingredients, alternating with milk. Mix until combined.
  • Fold in Blueberries: Gently fold fresh blueberries into the batter.
  • Pour and Bake: Pour the batter into the prepared pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  • Cool: Allow cooling in the pan briefly before transferring to a wire rack to cool completely.

Notes

Top with powdered sugar for a fancier presentation or enjoy slices warm with butter or cream cheese.
