  • 2 slices slices of bacon Cut into bite-sized pieces
  • 1 lb. small golden potatoes Diced into medium bite-sized pieces
  • 2 tablespoons olive or avocado oil For frying
  • to taste Salt, pepper, and Old Bay seasoning Adjust based on preference
  • 1-2 cloves garlic, minced
  • 1 tablespoon pure maple syrup For sweetness
  • to taste fresh parsley or chives For garnish, optional

Instructions
 

Preparation

  • Cut bacon slices into bite-sized pieces and set aside.
  • Dice the potatoes into medium bite-sized pieces and place them in a bowl filled with cold water to prevent browning.
  • Drain and dry the potatoes thoroughly.

Cooking

  • Heat two counts of olive or avocado oil in a 10-12" skillet over medium-high heat.
  • Add the potatoes to the hot oil. Season with salt, pepper, and Old Bay seasoning.
  • Cook the potatoes for about 10 minutes, stirring often, until they are brown.
  • If the potatoes start to stick, add one more drizzle of oil.
  • Add the bacon to the potatoes, toss, and cook for another 4-5 minutes.
  • Once the bacon is crispy, reduce heat to medium-low, and add the minced garlic.
  • Toss everything together and cook until fragrant and tender, about 2 minutes.
  • Drizzle the maple syrup over the mixture and toss again, cooking for another minute.
  • Taste and adjust seasonings if necessary, garnish with chives, scallions, or parsley if desired.

Notes

For extra crispy potatoes, dry them thoroughly after soaking. You can also prepare bacon or potatoes ahead of time. Experiment with spices like paprika or cayenne for added flavor.
