Ingredients
  

For the bowl

  • 1 lb boneless, skinless chicken breast Cut into bite-sized pieces.
  • 1 cup cooked rice White, brown, or cauliflower.
  • 1 cup mixed veggies Broccoli, bell peppers, carrots.
  • 2 tablespoons olive oil For sautéing.
  • Salt and pepper To taste.

For the sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha Adjust for desired spiciness.
  • 1 tablespoon honey For sweetness.
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions
 

Cooking the rice

  • Cook your rice according to the package instructions and set aside.

Preparing the chicken

  • Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes.

Making the sauce

  • In a small bowl, mix together mayonnaise, sriracha, honey, garlic powder, and lime juice. Adjust for taste if needed.

Cooking the veggies and combining

  • Once the chicken is cooked, add the mixed veggies and cook for an additional 2-3 minutes until they are just tender.
  • Remove from heat, pour the sauce over the chicken and veggies, stirring to coat everything evenly.
  • Serve the bang bang chicken over rice, garnished with extra sriracha or chopped green onions if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This recipe can easily be doubled for larger servings or leftovers. For a vegetarian option, substitute chicken with tofu or chickpeas.
