Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken breasts or thighs Cut into bite-sized chunks or strips.
  • 1 cup buttermilk For soaking the chicken.
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch Can adjust for a lighter coating.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Vegetable oil For frying.

For the Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce Adjust for desired spice level.
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil Optional.

Optional Garnishes

  • Green onions, sliced
  • Sesame seeds
  • Cilantro, chopped

Instructions
 

Preparation

  • Cut the chicken into bite-sized chunks or strips and soak them in buttermilk for 30 minutes to an hour.

Coating the Chicken

  • In a shallow bowl, mix flour, cornstarch, salt, pepper, garlic powder, and paprika.

Frying the Chicken

  • Heat vegetable oil to about 350°F (175°C) in a deep pan or fryer.
  • Dredge each piece of chicken in the flour mixture and fry for 4-5 minutes until golden brown.
  • Remove the chicken and drain on a paper towel-lined plate.

Making the Sauce

  • In a bowl, whisk together mayonnaise, honey, sriracha, rice vinegar, and sesame oil until smooth.

Combining Chicken and Sauce

  • Toss the hot fried chicken in the sauce until evenly coated.

Serving

  • Transfer the Bang Bang Chicken to a serving platter and garnish with green onions, sesame seeds, and cilantro. Serve hot.

Notes

You can adjust the spice level of the sauce and use an air fryer for a healthier version.
