Ingredients
  

For the Base

  • 8 oz pasta Use whole grain or gluten-free pasta as alternatives.
  • 1 block Boursin cheese A similar creamy cheese or herb-flavored cream cheese can be substituted.

For the Sauce

  • 1 cup sundried tomatoes, drained and chopped Fresh diced tomatoes can be used for a different flavor.
  • 2 cups fresh spinach Swiss chard or kale can substitute for spinach.
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil Consider using high-quality olive oil for more flavor.
  • Salt and pepper to taste Season generously.

To Serve

  • Fresh basil for garnish (optional) Adds flavor and visual appeal.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, mix the Boursin cheese, sundried tomatoes, minced garlic, olive oil, salt, and pepper until combined.

Baking

  • Place the baking dish in the preheated oven and bake for about 25-30 minutes, until the cheese is melted and bubbly.

Cooking the Pasta

  • While the cheese bakes, cook the pasta according to the package instructions until al dente.
  • In the last 5 minutes of cooking the pasta, add the fresh spinach to the boiling water.

Combining

  • Drain the pasta and spinach, then add them to the baked Boursin mixture. Toss everything together.

Serving

  • Garnish with fresh basil if desired, and enjoy your meal hot.

Notes

You can prepare the Boursin mixture ahead of time. Store it in the fridge until ready to bake. The dish can be stored in the refrigerator for up to 3 days.
