  • 2 large eggs
  • 100 g feta cheese Can substitute with goat cheese or ricotta.
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach Use fresh for best flavor.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • optional Fresh herbs (for garnish) Add for additional flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a baking dish, combine the cherry tomatoes and spinach, and drizzle with olive oil. Season with salt and pepper.
  • Add the feta cheese in the center of the dish.
  • Carefully crack the eggs over the feta and vegetables.

Cooking

  • Bake in the preheated oven for about 15-20 minutes, or until the eggs are set to your liking.

Serving

  • Remove from the oven, garnish with fresh herbs if desired, and serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently before serving. You can add extra vegetables like bell peppers or zucchini for added nutrition.
