Baked Feta and Broccoli Pasta

Ingredients
  

For the Base

  • 8 oz pasta You can use any type of pasta you prefer.
  • 4 cups broccoli florets Frozen broccoli can be used; adjust baking time accordingly.

For the Sauce

  • 1/2 cup extra virgin olive oil Consider using avocado oil for a different flavor.
  • 1/4 tsp salt Adjust to taste.
  • 1/2 tsp fresh cracked black pepper Adjust to taste.
  • 8 oz brick of feta A light feta or goat cheese can be used as a lower-fat option.

To Serve

  • 1 tbsp lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp fresh chopped basil Can substitute with mint or parsley if basil isn't available.

Instructions
 

Preparation

  • Preheat your oven to 400°F (205°C). Cut the broccoli florets into quarters and place them in a baking dish.
  • Drizzle the broccoli with olive oil, then sprinkle with salt and pepper. Toss to coat thoroughly.
  • Make a space in the center of the broccoli and place the block of feta there. Drizzle additional olive oil and sprinkle more black pepper on top of the feta.

Baking

  • Bake in the preheated oven for about 35 minutes, or until the broccoli is tender and the feta is slightly golden.

Cooking Pasta

  • While the feta and broccoli are baking, cook your pasta according to the package directions. Reserve 1/2 cup of pasta water before draining.

Combining Ingredients

  • Once baked, remove the broccoli and feta from the oven and stir them together in the baking dish. Pour in reserved pasta water until you reach your desired creaminess.
  • Add warm cooked pasta to the baking dish and mix everything together.

Finishing Touches

  • Finish with lemon juice, lemon zest, and fresh basil. Stir to combine fully and serve hot.

Notes

Drizzle high-quality olive oil over the finished dish for extra richness. Consider adding a sprinkle of toasted pine nuts or walnuts for crunch.
