For the Chicken

  • 4 pieces chicken leg quarters
  • 2 tablespoons olive oil Can substitute with avocado oil or melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika Can substitute with chili powder and cumin
  • to taste salt
  • to taste pepper

To Serve

  • to taste fresh herbs optional, for garnish

Preparation

  • Preheat your oven to 425°F (220°C). This high heat will help the skin become crispy.
  • In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Stir until well mixed.
  • Add the chicken leg quarters to the bowl and toss until they are thoroughly coated with the seasoning mixture.
  • Place the seasoned chicken leg quarters on a baking sheet, skin side up, making sure they are spaced out evenly.

Cooking

  • Bake in the preheated oven for about 40-45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy. Use a meat thermometer to check the doneness for best results.
  • Let the chicken rest for a few minutes before serving. Garnish with fresh herbs, if desired.

Notes

For extra crispy skin, consider flipping the chicken halfway through baking.
