  • 1 medium ripe avocado make sure it's ripe for easy mashing
  • 1 large egg can be poached, fried, or scrambled
  • to taste salt
  • to taste pepper

Optional Toppings

  • as desired cherry tomatoes halved
  • to taste red pepper flakes for a spicy kick
  • to taste feta cheese crumbled
  • to taste lemon juice to prevent browning of the avocado
  • as desired microgreens for added nutrients

Instructions
 

Preparation

  • Toast the slice of whole-grain bread until it’s golden brown and crispy.
  • While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado to your preferred texture and season with a pinch of salt and a squeeze of lemon juice.

Cooking the Egg

  • Cook the egg according to your preference: poached, fried, or scrambled.

Assembly

  • Spread the mashed avocado generously over the toasted bread.
  • Place the cooked egg on top of the avocado.
  • Add any optional toppings as desired.
