  • 1 cup corn (fresh or frozen) Fresh corn is preferred, but frozen works well.

For the Seasoning

  • 1 piece lime (juiced) Substitute with lemon juice if lime isn't available.

To Serve

Preparation

  • Heat a skillet over medium-high heat and add the corn. Char until it starts to brown, about 3-5 minutes, stirring occasionally.
  • In a bowl, mash the avocados and mix in the lime juice, salt, and pepper.

Combination

  • Once the corn is charred, let it cool slightly, then add it to the avocado mixture. Stir gently to combine.

Serving

  • Serve the avocado and corn mixture on tortillas or toast, garnished with cilantro.

Notes

For added texture, lightly toast tortillas before serving. Adjust seasoning with lime juice as needed. Refrigerate any leftover avocado mixture and revive with lime juice before serving again.
