  • 2 cups masa harina Traditional corn flour for gorditas.
  • 1.5 cups warm water Important for dough consistency.
  • 1 teaspoon salt Enhances flavor.
  • 2 tablespoons vegetable oil Plus more for frying.

For the Filling

  • 2 cups shredded chicken or beef Use beans or cheese for vegetarian options.
  • 1 whole onion, diced Can use red or green onions for milder flavor.
  • 1 cup chopped fresh cilantro Adds freshness to the filling.

To Serve

  • 1 whole lime wedges For squeezing over the gorditas.

Instructions
 

Make the Dough

  • In a large bowl, combine the masa harina, warm water, salt, and 2 tablespoons of vegetable oil. Knead until a soft, pliable dough forms.

Shape the Gorditas

  • Divide the dough into 12 equal pieces and roll each into a small, round disc, about 1/4 inch thick.

Prepare for Frying

  • In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat. Ensure the oil is hot before frying.

Fry the Gorditas

  • Fry the gorditas in batches for 2-3 minutes per side, or until golden brown and crispy.

Drain and Fill

  • Drain the fried gorditas on a paper towel-lined plate. Cut each gordita in half and fill with shredded chicken or beef, diced onions, and chopped cilantro. Squeeze fresh lime juice over the top.

Notes

Gorditas are best served warm. Experiment with different fillings and toppings for variety.
