Ingredients

  • 2 Honeycrisp apples, diced
  • 2 cups broccoli florets
  • 1/2 cup nuts (such as walnuts or pecans), chopped

Dressing

  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the diced apples and broccoli florets.
  • In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper to create the dressing.
  • Pour the dressing over the apple and broccoli mixture, add the chopped nuts, and toss everything together until well coated.
  • Chill the salad for at least 30 minutes before serving.

Serving

  • Serve chilled on a plate or in a bowl.
  • Garnish with extra nuts for more crunch.

Notes

Cut apples into even pieces for balanced bites. Toss apples with lemon juice to slow browning. The salad stays good for 2 to 3 days in an airtight container in the fridge. Stir before serving if the dressing settles.
