  • 1/4 cup grated parmesan cheese Freshly grated for better melting.
  • 1 teaspoon red pepper flakes Scale from 1/4 tsp (mild) to 1 1/2 tsp (spicier).
  • 1 tablespoon fresh herbs (like parsley, basil, or oregano) Use a mix if desired; dried can be used in a pinch.
  • Salt to taste Adjust based on the saltiness of the parmesan.

Preparation

  • Peel and mince the 3 cloves of garlic as finely as you can and chop the fresh herbs.
  • Pour 1/2 cup olive oil into a small bowl and add the minced garlic, stirring to combine.
  • Add 1/4 cup grated parmesan and 1 teaspoon red pepper flakes, mixing until the cheese begins to soften.
  • Stir in the fresh herbs and a pinch of salt. Taste and adjust seasoning as needed.
  • Let the dip rest for 5-10 minutes at room temperature before serving.

Notes

This dip can be made ahead and stored in the fridge for up to 3-4 days. Serve it with warm bread or use it as a drizzle over grilled vegetables.
