Ingredients
  

Vegetables

  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 large red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces

Spices and Oil

  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper

Meat

  • 1 package chicken sausage (12 oz) – robust Italian flavor

Instructions
 

Preparation

  • Chop the veggies and add them to a large bowl. Drizzle with avocado oil and toss to coat.
  • In a smaller bowl, mix the spices (garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper) together and add to the veggies. Toss to coat.
  • Slice the chicken sausage into 3/4 inch rounds and add to the bowl with the veggies. Toss everything together.

Cooking

  • Preheat the air fryer to 390°F (if needed) and spray the air fryer basket with cooking spray.
  • Add the veggie and sausage mixture to the air fryer basket in an even layer and cook for 10 minutes, flipping halfway through.

Serving

  • Once cooked, remove everything from the air fryer and serve hot, alone, over rice, or with a simple side salad.

Notes

Cut vegetables to the same size for even cooking. Do not crowd the basket; work in batches if necessary. Flip halfway for even browning. Use flavorful sausage for better taste. Check for doneness at 8 minutes if your air fryer runs hot.
